Capacity forms one part of a considered purchase. Begin with the volume of preparation the bench expects, then look to the equipment the manufacturer specifies for that product.

A greater listed capacity may suit a busier bench, yet it can also require a particular compatible setup and thought about where it will be stored. Size alone is a poor guide.

Use the filters to compare what the catalogue currently holds. Send the product you are considering together with the equipment you already use, and compatibility and availability will be checked before you commit.

Use the kitchen's production record as the starting point. Compare an ordinary service, the busiest recurring service and any booked event. Note expected batches, the time available between them, and whether the equipment stays at one station. This turns capacity from a marketing number into a question about how the bench actually works.

Then check the Cream Deluxe system as a whole. The cylinder, regulator, connector and siphon must be an approved combination in current manufacturer documentation. Moving to another listed capacity can change those requirements. Never treat a similar fitting, an adaptor found elsewhere or a successful physical connection as evidence of safe compatibility.

Measure the practical footprint too. Review secure storage, ventilation and temperature conditions, the path from receiving to storage, and the people authorised to handle the item. Larger is not more efficient if it creates poor storage or forces staff to work around an awkward unit during a busy shift.

A final comparison should include expected use, compatible equipment, storage, receiving arrangements, staff familiarity and availability. Keep the result with the purchasing note and review it when the menu, team or service volume changes. Capacity is best chosen as part of a repeatable process, not as a one-time guess.
